Menu Planning

So I sat down and worked on my first attempt at menu planning. I got the rest of May hammered out and all of June. It was a little trickier than I thought it would be. I started to dry up with ideas somewhat quickly but then I pulled out all my old May and June issues of Martha Stewart Everyday Food. With Spring and Summer ahead and my new diet in full swing

I made every Monday night salad night. I've come up with a different salad for every Monday.

Tuesdays alternate between pasta and Mexican food.

Wednesdays are one day that are always easy because that is always pizza night.

Thursdays and Fridays are the days I mix it up between old favorites and new recipes that I want to try.

Saturdays I put in dishes that I make in bulk and keep ready and on hand. While Saturdays in theory could be a day when I could make something fancy or more involved, I'd really rather spend the weekend with the hubby and kids.

Sundays again in hopes of keeping it simple for those family fun days BBQ burgers and dogs.

I can't begin to tell you how awesome it feels right now knowing that I don't have to think about "what is for dinner" for over a month! Actually there is one thing...knowing that today is Wednesday so tonight all I'm doing is making a fresh salad and throwing a thin crust pizza in the oven!
